Sigappu Arisi (Red Rice Sadham)
Ingredients
- Sigappu Arisi – 1 cup
- Water – 3 cups
- Salt – to taste
Cooking Process
- Wash the rice 2–3 times and soak for 30 minutes.
- Add rice and water to a pressure cooker.
- Cook for 4 whistles on medium flame.
- Allow pressure to release naturally.
- Fluff gently and serve hot.
Best Served With:
Sambar, rasam, vegetables

Kalyana Ponni (Pulungal Arisi – Steamed Rice)
Ingredients
- Pulungal Rice – 1 cup
- Water – 2½ cups
- Salt – to taste
Cooking Process
- Wash rice thoroughly.
- Soak for 20 minutes.
- Pressure cook with water for 3 whistles.
- Let it rest for 5 minutes, then mix lightly.
Best Served With:
Sambar, kuzhambu, poriyal

Nei Kichadi Kolam Pacharisi (Ghee Rice)
Ingredients
- Kolam Rice – 1 cup
- Ghee – 2 tbsp
- Cashews – 10
- Water – 2 cups
- Salt – to taste
Cooking Process
- Wash rice and soak for 15 minutes.
- Heat ghee, fry cashews till golden.
- Add rice and sauté for 1 minute.
- Add water and salt, cook for 2 whistles.
- Mix gently after cooking.
Best Served With:
Kurma or dal

Karung Kuruvai Arisi (Kanji)
Ingredients
- Karung Kuruvai Rice – ½ cup
- Water – 4 cups
- Salt – a pinch
Cooking Process
- Wash and soak rice for 45 minutes.
- Cook with water in pressure cooker for 5 whistles.
- Mash lightly to make porridge.
- Add salt and serve warm.

Buttermilk, pickle
